Sapienti is a Sardinian still red wine IGT Isola dei Nuraghi , made from Barbera Sarda, Merlot and Cabernet Sauvignon produced in Sardinia by Tenute Smeralda in Donori.
The grapes are grown in vineyards 20 years old on sandy clay/granitic soil with north/south exposure of the rows at an altitude of 160 meters above sea level. The vineyards have a density of 4000 plants/Ha and a yield of 80/90 q/Ha.
Grapes are harvested by hand and placed in boxes when result almost withered usually in late September, early October.
In the cellar the maceration process of the grapes lasts for about 20-30 days at controlled temperature. Malolactic fermentation carried out in steel.
Sapienti Isola dei Nuraghi IGT ages sixteen months in French oak barriques and at least another twelve months in bottle.
Sapienti presents an intense, almost impenetrable ruby red color to the eye. The nose gives intense and complex aromas of ripe fruit reminiscent of cherry jam and red plum, hints of licorice. spices and chocolate and light balsamic notes.
A red wine of excellent structure, smoothness and persistence.
At the table it pairs perfectly with very mature cheeses, fatty and succulent meats. A wine to be sipped slowly.
It is recommended to be tasted at a temperature of 15-18 °C.
