Winemaking | After destemming and the addition of selected yeasts, steel fermentation of the must starts, which remains in contact with the skins for 5 days at 12 °C. At this point, the flower must is separated from the rest and continues to ferment at 16 °C, while the remaining must is separated from the skins by soft pressing and left to ferment for 24 hours at 7 °C. The two musts are then blended and continue to ferment together until the sugars are completely consumed. After a few more racking, tartaric stabilization at -3 °C for 10 days follows |
