DOC is a still red wine Carignano del Sulcis DOC made from 100% Carignano grapes from free-range vines, produced by the la Sabbiosa Estate in Sant’Antioco.
Carignano grapes originate in vineyards located in the Calasetta area on sandy soil about 60-70 years old bred in the espalier and sapling systems with a yield of between 1/1.2 kg and a yield per hectare of about 25-30 quintals per hectare. One plant is equivalent to one bottle.
The 2018 harvest took place a week earlier than usual (Sept. 21), as there has been intense, heavy and frequent rainfall since mid-August. Difficult year and only through careful and constant monitoring of the vineyards was it possible to save the harvest.
The presence of the mistral also prevented the clusters from rotting on the plant before they reached maturity, and the sandy soil prevented dangerous stagnation on the root system. However, the hard work was rewarded by an extremely refined and balanced wine.
Vinification: after careful selection of the grapes, hand-picked in small crates, the clusters are transported to the winery where destemming and subsequent mashing take place. Fermentation takes place in steel tanks at a controlled temperature of 26-28°C. Repeated repassing and delestage ensure good extraction of aromatic and color components.
The wine is aged in temperature-controlled stainless steel tanks followed by aging for at least six months in the bottle.
Tenuta la Sabbiosa ‘s DOC Carignano is ruby red in color with purplish highlights. The nose gives an intense and persistent aroma with clear notes of ripe fruit and jam. Full and harmonious flavor with persistent fruity notes.
At the table it goes perfectly with first and second courses of meat, tuna, fish soups, cured meats, cheeses and mushrooms.
It is recommended to serve at a temperature of 16-18 °C.
Tenuta la Sabbiosa’s DOC Carignano del Sulcis is produced in 4,000 bottles.
