Argeste is a Vermentino di Gallura DOCG Superiore still white wine made exclusively from Vermentino grapes, produced by the winery Sabresenò in Gallura, Sardinia.
Vermentino grapes grow in Gallura, to be precise near the village of Monti, at the foot of Limbara, 315 meters above sea level on rocky soil rich in granite. The vineyards are 20 years old, facing west, trained on guyot with an average of 4,000 vines per hectare and a yield of about 70 quintals per hectare.
In order to ensure maximum quality, the harvest is carried out manually with the help of crates in a very short time in order to avoid the occurrence of spontaneous fermentation at the harvest stage and deliver the grapes to the winery in the best condition.
With the aim of giving the wine the maximum in terms of aromas, the grapes, after a passage in the deraspo-crusher, are placed inside a steel lung, where they are slowly crushed, with a short maceration taking place during the soft pressing.
Argeste‘s winemaking process, lasting a total of about 6 months, takes place in temperature-controlled stainless steel tanks using a liquid-cooled coil.
Argeste, in contrast to other Vermentinos, due to its particularly important structure and the technical characteristics of the bottle and cork used, also lends itself to bottle storage and aging for a medium period (1-2 years).
Selected yeasts are used to maximize the aromas present in Argeste. Total sulfur dioxide is 80 milligrams/liter.
Argeste Vermentino di Gallura DOCG Superiore has a brilliant straw yellow color with golden reflections and slight green hues.
The nose is distinguished by an intense and fine bouquet of good complexity where the floral freshness of chamomile and wildflowers marries with the elegance of white peach and candied citrus. The sweet spice, of vanilla and cinnamon, tending to notes of honey and the fragrance of bread crust, gives it the softness that, joining the distinct iodized minerality of the granitic soil and the light notes of herbs, such as sage and rosemary, perfectly expresses the strong character of this Vermentino di Gallura.
In the mouth, it is striking for its savoriness and freshness reminiscent of typical Mediterranean scrub notes. Full-bodied, it is dry, warm and quite soft; balanced, with a slightly accentuated alcoholic note, of important intensity and persistence, with bitterish returns of almond contrasted with the liveliness of minerals.
Argeste Vermentino at the table perfectly accompanies dishes with intense flavors such as shellfish or seafood first courses of considerable flavor such as linguine vongole e bottarga. Given its particularly structured taste, it is also nicely paired with medium-aged hard cheeses or flavorful white meats such as rabbit with herbs.
It is recommended to serve at a temperature of 10-12 °C.
