Pure Sardinia’s Molo A is a Sardinian still white wine Vermentino di Gallura DOCG, made from only Vermentino grapes grown in Sardinia, in the historical sub-region of Gallura.
The 30-year-old vineyards located in the area of Monti (SS) grow on sandy soils from granite disintegration, poor in organic substances but very rich in minerals. The vines have long been managed organically; in fact, no chemically derived fertilisers or fertilisers are used.
The Vermentino grapes are harvested manually in small plastic baskets, usually in September.
In the winery, the grapes are processed a few hours after harvesting, cooled by means of a tube bundle to preserve and enhance their aromas, and macerated for a day together with the free-run must inside the press (pellicular maceration).
Fermentation and subsequent vinification takes place individually in temperature-controlled steel tanks generally for 7 months with frequent bâtonnage. Towards the end of spring, the wine is clarified by cold decantation and traditionally bottling takes place in June.
Molo A Vermentino di Gallura DOCG – Superiore has a brilliant golden yellow colour with faint greenish reflections. In the glass it is consistent but flowing, with dense and regular arches that hint at the complexity of the product.
Complex and persistent on the nose, with aromas of ripe white-fleshed fruit and clear mineral and iodine notes. Fine and elegant hints of summer scrub. Alcohol barely perceptible.
A complex Vermentino di Gallura, broad, soft in the mouth, with acidity and sapidity to give it a nice freshness, fine and persistent, dry. A very balanced wine where the alcohol part seems to disappear within its structure. It closes with a slight note of bitter almond typical of Vermentino processed in purity.
On the table it goes perfectly with Fin de Claire oysters and seafood in general, scampi and raw prawns, sashimi and fish tartare. Risottos and pastas with shellfish or roe. Salt-baked or grilled seafood, white meat. Also excellent with fresh soft/semi-firm cheeses such as locally produced pecorino.
It is recommended to serve at a temperature of 8-10 °C in a 38 cl Rhenish glass.
