Winemaking | In the cellar, the grapes are destemmed and softly pressed, leaving the must in contact with the skins for about 16-18 hours. Fermentation takes place in steel tanks at a controlled temperature using spontaneous yeasts and lasts approximately 13-15 days; the wine obtained is generally refined until March and once filtered, it is bottled the following April. |
