Capo F by Pure Sardinia is a Sardinian still red wine Cannonau di Sardegna DOC, obtained from only Cannonau grapes cultivated in Sardinia, in the Oddoène valley, in the territory of Dorgali (NU) within the Gennargentu National Park.
Grapes cultivated with the non-certified organic method have a maximum yield of 1 kg per plant, and are harvested by hand in small plastic baskets never weighing more than 9 kg, usually towards the end of September.
In the cellar, the grapes are destemmed and crushed and once maceration is complete, which lasts about 12-14 days with frequent pumping over, the must is transferred to temperature-controlled steel tanks.
Vinification normally continues for 18 months in the same containers with frequent bâtonnage and bottling in late spring.
Capo F of Pure Sardinia has an intense but not concentrated ruby red colour, typical of the Cannonau grape processed in purity. In the glass it is consistent and flowing, with abundant and tight tears that denote the alcoholic strength of the product.
The nose is immediately interesting, with aromas reminiscent of raspberry, plum, pink pepper and dog rose. A very fine balsamic and light vanilla scent closes the aromatic department. Alcohol in line with the structure of the wine.
In the mouth, it is fruity, warm, soft, balanced, with moderate and fine tannin in line with the structure of the wine. Pronounced acidity and minerality lend freshness and soften the alcohol structure, making it elegant and undemanding to drink.
At the table, it goes perfectly with all traditional Sardinian and Mediterranean earthy hors d’oeuvres, such as cured meats, pickles and pâtés. First courses with red game or game sauces, barbecued meat and spit-roasted Sardinian suckling pig. Perfect with semi-matured Pecorino Sardo DOP cheese and Carasau or Guttiau bread.
It is recommended to serve in a 64 cl Burgundy glass at a temperature of 16-18 °C.
