Winemaking | In the cellar, the grapes are destemmed and crushed and once maceration is complete, which lasts about 12-14 days with frequent pumping over, the must is transferred to temperature-controlled steel tanks. Vinification normally continues for 18 months in the same containers with frequent bâtonnage and bottling in late spring. |
