The Carignano del Sulcis DOC from the Tenuta la Rocciosa of Calasetta is a still red wine made from pure Carignano grapes.
Carignano grapes are grown in vineyards located in Sulcis, bred with espalier training and aged between 10 and 15 years. Yield per stump between 2/2.5kg and yield per hectare between 60/70 quintals.
In the winery after careful selection of the grapes, hand-picked in September, fermentation takes place in steel tanks at controlled temperatures 26-28° C. Repeated repacking and delestage ensure good extraction of aromatic and coloring components. Subsequent aging in steel.
Red-colored Carignano with violet hues, intense and persistent aroma with clear notes of red fruit and jam. The mouthfeel is full, harmonious and warm with persistent fruity notes.
At the table it goes well with every expression of land-based cuisine but also tasty seafood dishes, a reminder with its wide and varied bouquet how Sardinia is a “continent” of scents and flavors.
It is recommended to serve at a temperature of 16-18 °C.
