Perdas Longas is a still red wine Cannonau di Sardegna DOC, made from pure Cannonau grapes, produced by the wineryFrancesco Cadinu of Mamoiada in Sardinia.

Perdas Longas best reflects the legacy of the Francesco Cadinu winery, an identity wine made from carefully selected Cannonau grapes from old vineyards in the Mamoiada countryside in the areas of “Elisi” and “Perdas Longas,” the latter meaning “long stones” given the abundance of Menhirs in the area.

Cannonau grapes grow in vineyards about 70 years old at 650 meters above sea level on crumbling granitic soil.

The tree training system is used, with an average yield of 35 quintals per hectare.

Harvesting of the grapes, which takes place in the traditional way around mid-September, in the winery follows the vinification process in small vats without temperature control. Spontaneous fermentation without addition of yeast for 15 to 20 days until the sugars are exhausted.

Perdas Longas Cannonau di Sardegna DOC ages in barrels for between 12 and 15 months.

At the table it goes well with red meats, game, savory or aged cheeses and fatty dishes.

It is recommended to serve at a temperature of 16-18 °C.
