Balente Superiore from Cantine Carboni di Ortueri is a Mandrolisai DOC Superiore wine made from typical local grapes Bovale Sardo (the Muristellu), Cannonau and Monica.
The grapes are grown in vineyards over 100 years old cultivated with the alberello system from the sunniest Mandrolisai vineyards in the Ortueri with a yield of 40 quintals per hectare.
Once they have reached the perfect degree of ripeness, (during the first ten days of October) they are harvested by hand and taken to the cellar where red vinification takes place with traditional punching down of the skins, maceration at a controlled temperature of 25-28 °C. 12 months in steel. The wine matures 2 years in 225 litre barrels and further in the bottle.
Balente Superiore Mandrolisai DOC has a compact ruby colour. The nose intrigues with notes reminiscent of jammy fruit, sweet notes of spices and Mediterranean herbs.
In the mouth, it is characterised by great power. The considerable alcohol content is well supported by the structure and well-integrated tannins. Persistent finish, with perceptions reminiscent of fruit and spices.
On the table it goes well with cheese and generally with red meat.
Its ideal serving temperature is between 16 and 18 °C.
