Parèda Mandrolisai DOC of the Meana Terra del Mandrolisai Winery is a high-quality red wine that carries with it the excellence of the Mandrolisai region of Sardinia. Classified as D.O.C. (Denominazione di Origine Controllata), this wine represents the authenticity of the native grape varieties of this area.
The blend of Parèda Mandrolisai DOC consists of 40% Bovale Sardo, 30% Cannonau, 20% Monica and the remaining 10% ancient red grape varieties indigenous to Mandrolisai. The grapes come from vineyards located in the Mandrolisai district, at an altitude between 600 and 700 meters above sea level.
Parèda Mandrolisai DOC vines are bush-trained on shale soils. The plants have an average production of 25 quintals per hectare. Their age is between 70 and 80 years, giving the wine depth and distinctive character.
Grapes are harvested by hand, with special care taken to select the grapes at harvest time. Vinification takes place with temperature-controlled fermentation between 28 and 32°C. Maceration lasts 16 to 18 days, using the delastage technique. Next, the wine is aged in French oak tonneaux and further refined in the bottle for at least 6 months.
Parèda Mandrolisai DOC has a deep ruby red color, with light garnet reflections that become more evident with aging. Its aroma is broad and persistent, with hints of ripe fruit accompanied by notes of vanilla and cinnamon.
On the palate, this wine stands out for its great structure, harmony and balance. It has good taste and smell persistence, leaving a pleasant mouthfeel.
Parèda Mandrolisai DOC pairs beautifully with complex, full-bodied dishes such as roasted meats and aged cheeses. Its alcohol content is 14.5% Vol, and it is recommended to be served at a temperature of 18 °C.
