Giovanni Camboni is a white wine produced by the Camboni Winery of Tissi, made from 100% Vermentino grapes and falls under the Denominazione di Origine Controllata Vermentino di Sardegna.
This wine has an alcohol content of 13.5 percent vol, and its vinification follows a careful process. Grapes are harvested by hand, carefully selecting those that are slightly overripe.
Grapes selected from the highest and sunniest part of the vineyard are crushed and destemmed quickly. Next, the must remains in contact with the skins for 36 hours before pressing.
The must settles and is started for fermentation at a controlled temperature, using indigenous or selected yeasts. Aging takes place in steel on the fine lees, with batonnage for about 6 months, then completion in the bottle.
Giovanni Camboni Vermentino di Sardegna DOC shows a vivid, deep straw yellow color. On the nose, one can appreciate elegant floral notes alongside a fruity component that combines citrus tones with hints of yellow peach.
