‘Lillò’ – Cannonau di Sardegna DOC Passito – Agricola Soi
Lillo wine from the winery Agricola SOI of Nuragus is a Cannonau di Sardegna DOC Passito dry late harvest obtained from Cannonau grapes in Purity.
Cannonau grapesare grown short-pruned, non-irrigated, in vineyards on granitic breakdown soil with lenses of quartz conglomerate.
Harvesting takes place during the first decade of November, only when the season is propitious. The first part of the withering process takes place in the vineyard, which is followed, after cutting, by a further phase in low crates under the farm’s naturally ventilated canopies for about 15 days.
In the cellar, fermentation, at room temperature of about 12 °C, takes place in steel by December, and maceration on the skins lasts about 25 days.
The “Lillò” rests for at least one year in stainless steel to maintain the fruitiest organoleptic characteristics. In pre-bottling, it was decided not to strip the wine through microfiltration practices: clarity is achieved exclusively through the natural succession of racking.
Lillò Cannonau di Sardegna DOC Passito presents a ruby red color to the eye. On the nose, sensations of dried fruit and dried flowers are well blended with those of fruit in spirit such as cherry and with hints of myrtle.
A velvety tannicity and a freshness that is never invasive emerge in the mouth, well characterizing the pleasant sensations of this intriguing passito endowed with a wonderful balance between alcohol, structure and sweetness.
At the table it is enhanced with formance, dry cakes and small pastries. To be tried as a meditation wine.
It is recommended to serve at a temperature of 16-18 °C.
Lillò Cannonau Passito is produced in about 1000-1500 bottles depending on the vintage
